Sugar Coated Cashews

While typically reserved for holidays and special occasions, sugar coated cashews are the perfect everyday treat. This recipe serves two purposes in my life. The first is it offers a tasty sweet snack with a crunch that can go on for hours. Second, the house smells amazing afterward. Think of all the money I’m saving on scented candles.

Serves: 4 people
  • 1 lb. roasted and unsalted cashews
  • 1 egg white
  • 1 Tbl. water
  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  1. Preheat the oven to 300 degrees. Whisk the egg white and water in a large mixing bowl.
  2. Add the brown sugar, white sugar, cinnamon and nutmeg to the egg white mixture. Whisk until well combined. Fold in the cashews until completely coated.
  3. Line a large sheet pan with parchment paper. Pour the nuts in an even layer on the parchment paper.
  4. Bake at 300 degrees for 30-35 minutes. Toss halfway through baking. Near the end of the baking time, make sure the sugar doesn’t burn.
  5. Allow the nuts to cool before serving. Recipe makes roughly 5 cups of nuts.
